Turmeric is the emblematic Asian spice, also known as Indian saffron. It is also found in West Africa. Turmeric is a perennial plant, the edible part of which is the rhizome, i.e. the underground part of the stem.

It is a particularly popular spice in Indian cooking, with the rhizome (the underground and sometimes underwater part of the stem of some perennial plants) dried and ground to a powder. Turmeric is widely used to help keep cooked dishes fresh.
