Cocoa butter

Cocoa tree

Native to the tropical forests of Central and South America, the cocoa tree is also grown in West Africa. Cocoa butter is a vegetable fat extracted from the cocoa bean during the process of producing cocoa powder.

 

Extraction procedure

The butter is obtained from cocoa beans using a mechanical process:

  • Cleaned, husked and deseeded (cocoa bean)
  • Roasted or not
  • Natural or alkalinised
